Linzer
A soft, buttery, lemony cookie filled with your choice of apricot or raspberry jam, or Nutella. A European Christmas cookie classic that we make all year round. The hint of lemon in the dough nicely compliments the raspberry or apricot fillings we offer.
Linzer cookies are named after the Linzer Torte, which was originated in Linz, Austria. The torte is a pastry traditionally filled with black currant jam and topped with a lattice crust. The linzer cookies flavor the torte, but the dough is sandwiched with the jam. The top cut out shape mimics the lattice crust.
Linzer was my favorite cookie as a child. I used to bake it with my mom every holiday . We always used home made apricot jam. We had a lot of apricot trees and as a kid, I couldn't wait for the summer months when the apricots ripened. The trees were so full of fruit that we didn't even have to climb them, we could just pick the fresh juicy apricots from the branches hanging down. Making apricot jam every July with my parents was one of our familly traditions.
