This melt in your mouth lemony spongecake is dipped in a chocolate ganache and rolled in desicated coconut. The ganache is absorbed into the outside of the sponge cake and left to set, giving it a distinctive texture. Lamington originates from Australia. However, it is popular all over the world, known as coconut cube/bar in the US, kókuszkocka in Hungary, ystervarkies in South Africa and cupavci in Croatia.
The popular origin story claims that Lord Lamington, the governor of Queensland in 1901, accidentally dropped a piece of sponge into some melted chocolate. Rather than wasting it, he suggested to coat it in coconut, and this is how the Lamington was born.
